As promised, I have here my first food porn post (did you like my alliteration?). I have been getting requests for some Flame Cake so I decided to start with it.
This is not my recipe; this is totally Thorsten’s specialty. We used to get pre-made crust for our Flame Cake but one night out of hunger (and it was a Sunday so all the stores were closed) we were forced to make it from scratch….honestly, it tastes soooooooooooooo much better!
So I have been jokingly calling it a Flame Cake only because that is what Flammkuchen literally translates to. It’s actually not hard to make and the only time consuming part is the dough (which also doesn’t take that long either, frankly).
I will also apologize ahead of time for not always having exact measurements of things. We generally like to wing it and see what comes out. Also realize that in Germany, vegetables and fruits come in their true unaltered sizes (ie a lot smaller than what you will find in the States)
T ended up being my model whether he wanted it or not. But honestly, this boy knows how to cook 🙂
So we will start with the ingredients:
2 cups of flour
1/2 cup of water
1 tsp dash of salt
1 Tbspn Olive Oil
Diced Ham
Chopped Green Onions
Crème Fraîche (a milder Sour Cream)
- To start, mix the flour, water, and salt in a bowl and knead the mixture with your hands.Mix the contents until they are properly mixed and very sticky. Sticky is ok! Add some flour to help remove it from your hands
- Place the dough on a flat surface sprinkled with flour (also put flour on a roller).Then roll the dough into a flat shape. At this point, make it into any shape you want……as long as it fits in a baking pan
- Pull the dough carefully from the flat surface and lay it flat onto a baking pan
- Spread a good layer of Crème Fraîche on the dough.Put as little or as much as you want (it’s all about you!). But make sure to cover the bulk of the dough
- Cover your delightful Flame Cake with ham and green onions (and salt and pepper!)
- Place into the pre-heated oven at 180°C (356°F) for 15-18 minutes or until the crust turns a golden brown
- Remove finished piece of Heaven from the oven and enjoy!
- Serves 2 folks….er people….

p.s.: dough without yeast is modern style; originally the Flammkuchen was made from bread dough to test the heat of the oven (before put in the loafs)
