I decided to give you guys another recipe to try out over the weekend. It has quickly become one of T and my favorite recipes.
The inspiration came when T’s mom gave us a bag full of potatoes from her own garden. One morning, I asked T what he wanted to for dinner so I knew what to pick up on the way home (my job is a crossed the street from two grocery stores so it’s easy for me to pick up things after work). He simply said, “Something with my mom’s potatoes.” Or something to that degree…..it’s been awhile since that conversation occurred so I can’t remember the exact wording, but you get the picture.
Anyway, during my lunch break I scoured the interwebs on my phone in order to find a recipe that involved potatoes that strayed from the only things I know how to make with potatoes:
Hash browns (mmmm breakfast for dinner)
Baked potato
More fried potatoes
I mean, I had no problem making these but I wanted something more. Then I found it:

What is it? Swiss hash browns. Not kidding. But wait! There’s more! This recipe called for scrambled egg, smoked salmon, and dill? What the hell? Sounds (weirdly) awesome. I decided to go for it and since we have never looked back.
This recipe is painfully simple and allows you to really make it your own. So let’s start with the basics:

Ingredients (for 2 people):
5 small potatoes peeled and shredded
3 eggs scrambled
Smoked salmon
Dill or the glorious dill mustard from Ikea
Directions:
1. Once the potatoes and peeled and grated, fry away. I use a mix of garlic oil and olive oil (because I loves the garlic)
2. As you see in the photo below, I don’t make simple scrambled eggs. Every piece you see here goes into the making: basil, hot sauce (straight from Chicago), shredded Gouda, Italian seasoning, Tomato salt, and garlic
3. Mix all these ingredients with the eggs in a bowl and scramble away. Set aside until the potatoes are done
4. Ideally the potatoes are supposed to be fried in the shape of a ball, but I just make them like normal hashbrowns and try to spread them out as a bottom layer of the bowl
5. Once the potatoes are done and the pan is still hot, throw those eggs in there! Take the pan off the stove because it is still hot enough to cook the eggs without adding extra heat.
6. Place the finished eggs over the potatoes
7. Take the smoked salmon and pull them apart into smaller pieces and lay them over the eggs
8. At this point you can either sprinkle some dill over the salmon or use this amazing dill mustard that you can find at Ikea.
9. Side note: other recipes have said you can add Crème Fraiche, capers, and onions….but that is up to you!
See how simple that was? The first time I made it, T literally dove head first into the bowl. The only words I got out of him while he devoured it were, “It’s good.” It was followed by, “Is there more?” Thankfully this recipe allows for some left overs…believe me, you will want a second helping.

This is pretty fascinating….. I never did get into the whole bagel and lox thing, so putting salmon on things is still… confusing? heh! I will certainly put this on the list of stuff to try though. It certainly looks delicious!
Yeah, since moving here, I have learned to eat salmon on everything. I will have it on bread for breakfast, in pasta, Flammkuchen….it was sort of weird at first but it has only made me love salmon more 🙂
